The Bite: Tiffany's Famous Breakfast Tacos Recipe

If you ask me, there is no better food delivery vehicle than a tortilla. Whether it’s street tacos, a burrito wrapped in a wheat tortilla, or all of your favorite toppings folded up neatly in a tortilla to make a quesadilla, you really can’t go wrong. Knowing how much we love brunch food as well as tacos, in my opinion, there’s no better combination. Breakfast tacos are a great option that is quick and easy to make at home with ingredients you likely already have. Bonus, there’s a lot of opportunities to customize your breakfast tacos with a variety of toppings or sauces, and you can go as spicy or mild as you prefer. There’s endless possibilities to get creative, but we’re sharing the recipe for Tiffany’s Famous Breakfast Tacos to get you started.

Tiffany’s Famous Breakfast Tacos

Prep Time 20 Minutes | 6 Breakfast Tacos

Ingredients:

  • 1 Package of TortillaLand UNCOOKED tortillas (corn or flour whichever your preference)

  • 1 Package of Cotija Cheese

  • 8 Eggs

  • 1 Can of Black Beans

  • 8 Slices of Bacon (or Chorizo)

  • Crema

  • 2 Yukon Gold Potatoes

  • 1 Avocado

  • 1 Thing of Salsa (I love 505 Green Chili Mild Salsa)

  • 1 Clove of Garlic

  • Chopped Onion

 

Directions:

  1. Mix Eggs Together and Scramble in a Medium High Buttered Pan, cook and set aside.

  2. Cook 8 Slices of Bacon or A package of Chorizo (When I do a Breakfast Taco Bar, I do Both)

  3. Pop the potatoes into the microwave for 4 ½ minutes, once cooked cut up and throw into pan with some olive oil garlic, onion. Salt, pepper, cook until some golden brown.

  4. Pop Black Beans into Microwave for about a minute or two.

  5. Then take the package of tortillas and on a low/medium heat put a dash of olive oil or butter and start to cook your tortillas. Once those are cooked begin to set up your assembly line.

  6. 1) Tortilla 2) Spoonful of Eggs 3) Spoonful of Potatoes 4) A small spoonful of Beans 5) Add your meat 6) Cheese 7) and Dollop of Crema, Hot Sauce and Finish it off with a slice of avocado

  7. FYI - Wrap in a flour tortilla for a breakfast burrito wrap it in foil and freeze and have breakfast burritos all week long or to take camping :))
